Abstract

Varying yeast types in mead fermentation were used to determine which is the most successful in ethanol production. Three types of yeast were used and made in triplicate (Fig. 1). A basic mead recipe was used with honey, black tea, yeast, and water. Our results for each type of yeast can be seen in (Figs. 7,8,9). The LS yeast produced the most ethanol and the SR yeast resulted in the highest final sugar content.
